Changing Victory conditions in the midst of a game. Is it posssible???

Somebody posted in a message on this board that if you want to avoid a technology victory you can unceheck it during a game. I do NOT believe this, as the screen to set victoory conditions only comes up when you begin a
game. If I am wrong tell me how one can access and change the victory conditions screen while the game is in progress.
