Using the Windows 10 start menu on Windows 11 and it doesn't switch to full screen (tablet mode) once I detach my type cover (Surface Pro 8)

Sorry to hear you are having issues. But, I believe, to make the Start Menu to full screen, you need to turn on this option (refer to screenshot below).
