start11 Windows 11 File Explorer menu icons text and Customizing

I dislike the icon-only look of the Windows 11 File Explorer ribbon menu.  I did find the Windows 10 version to be cluttered but this is too far in the other direction.   

I would like the ability to turn on text below/beside the icons (Cut / Copy / Paste / Rename / Share / Delete).  I know the text appears if I hover the mouse (which is sadly also missing the keyboard shortcut info).  I support a lot of older users and the lack of text is a problem.   Same for those icons on a file right-click context menu.

It would also be great if we could customize the ribbon to put the features we use most front and centre.   e.g.   Toggle preview pane is one that I use a LOT and it is now three clicks down on the menu.
