From your screenshot, look like the apps you are having trouble is not fully compatible with Windowblinds. Its tabs using different graphics than windows tabs graphics. And looking at the screenshot you are using Night Shine by Vad_M, which I believe it change windows system colors. That why you have gray text on your menu.
Please try different theme/style.
