As I understand you can play a game on the biggest map available with dozens of opponents (single player), how do you do that? I see where only 8 can be added.

You need to download and add extra races, or make them yourself in the editor. Every instance of each race can be used only once in a game (though you could just copy them repeatedly).
I only play insane scattered maps. I go to the steam thingy and down load races and made a few myself. I play a custom race as well.
I currently had 25 major races and about 10 minors. On this galaxy with 'uncommon planets' and 'uncommon habitability' it averaged about 15-20 planets per major all being dependent on random placement.
This feels to me about perfect. I would love to get Nassselus's abundant mods in there but I don't want lots of planets, I do like his other changes though.
