Is there a way that I can change what the AI opponents are saying, such as deleting and replacing with what I want them to say? I understand that the file that shows what they're saying is an xml file and can't be edited in that format.

You can edit the GC2_Conversations,xml file all you like. XML files can be edited in notepad if need be, just be careful not to lose any of the XML tags.
