So I just updated my game to 1.15 via impulse, and was about to start a game with the star wars mod but there are no maps. They all disapeared when I activated the mod. All the scenario maps are empty and I can't create a map.

you need to update the maps from version 2 mapping to version 3.
I have written a small utility to convert the files from version 2 to version 3 format. it is here http://files.filefront.com/13469236

Also check the mod file for galaxy.manifest file. If the mod has that in there delete it. This caused a problem for me as well.
