The workaround is to open your user.setting file (located in the user path, go to game options > mods > show mod path and replace \Mods with \Setting) and manually set the resolution.
The game basically queries Windows for a list of supported resolutions and shows that, but sometimes with odd display drivers (or people's PCs hooked up to TVs) it doesn't get a list to display.
