What is starship bonus? Is it applied to military production or does it somehow improve your ships?
You can trade with other empires to get or give influence points. How does that work exactly?
It gives your ships an attack bonus.
Influence points are gained each turn based on the amount of influence you have over the galaxy (which in turn is based largely on your planets), and are all spent at each United Planets meeting at the end of each year.
