Sometimes Simple Is Good

I'm getting ready to go back out on the road as soon as they call me with a load. For this reason I don't want to go to the grocery to buy anything that I may not eat before having to leave. I'm using up what's left here.

I was getting hungry and rummaging around to see what I could come up with for lunch. Well, let's see, I have some macaroni, tomato sauce, assorted spices and herbs.

I cooked up some macaroni, drained it and added the tomato sauce, oregano, dried onion powder, salt, and black pepper.

It actually came out better than I expected.

If I'm still home this evening I'll whip up some fried rice.

Sometimes you come up with the best stuff when you have to be creative because your cupboards are getting bare. I am the queen of eggs, fritatas and omelets. No matter how empty my fridge and cabinet are I always seem to still have eggs. And pasta and rice and vegetables. How awful that we eat the most vegetables when we are broke. There is never any junkfood - hah.

I'm not real big on junk food anyway, buy yeah sometimes you have to get creative with whatever is on hand. Sometimes it works, sometimes you just have to choke it down. Especially with my cooking.

Yummmmm, pasta! Always a fan of pasta (and/or Pizza). Now you've got me hungry for dinner At least I have a good idea of what I might want for it this time

That sounds like goo-lash without the goo (meat). hehe...at least that's what my kids call it...we LOVE it.

Yeah, that's basically what it was. Meatless goulash. Was pretty tasty though.
