How to properly "jerk" your meat.

Time and patience a must.

Spending time up In Idaho in the backwoods, I wondered what to do with the amount of game meat I had, so I asked an oldtimer what to do, kindly he took the time out to explain how to turn meat into jerky.

It takes low, low heat, just enough to ignite the wood to smoke with no flame, and time lots of time , up to 12 hours if you want your meat properly smoked and jerked.

If anyone is intrested I will write to them with proper directions on how to smoke meat or fish.

I would smoke Salmon, but I'm not sure which end to light!! ;~D

do not forget that you have to use a paper that does not soak fishoil or it will be impossibe to light.

I got one of those dehydrating machines, it works great and can be used indoors. You dont get that smoke taste but my jerky is renowned by those that have tried it. Only takes about four hours to make too.
