I would like to arrange the icons and folders in a fence myself. is there such a possibility and if so where do I find the setting?

Hello,
You can right click on each fence and select "Sort Fence by"-> choose "None"
That will make that fence not it sort to anything but it Fences will always align all the icons starting from top left. There is no option yet to have the icons not aligning. But, there were few requests made by other users to add this features in the future. Its up to the Stardock support team for their review and recommendations.
