The Register has an article that discusses the fact that at the end of the day, while the G5 may be a 64bit CPU, Panther, the code-name to MacOS 10.3, is still 32bit.

I think that the writer of the story has a few points mixed up. The beta version of Panther that has been given to developers has been coded in 32 bit, because most if not all of the developers are running the beta Panther on a G4. a 32-bit processor. In August or September, when Panther is officially released, it will be optimized for a 64-bit processor, the G5.

Well, MWNY (CreativePro Expo, formally MacWorld New York) is in a few days, so maybe Apple's VP of hardware will clear all this up for us!

I've also read that unlike the x86 64-bit variants (Itanium) the G5 does not suffer a loss in performance by running 32 bit software. Basically it's a "run what you got" processor. I can't wait to see this in practice.
