Is there a way

Not the way you want to, I think. The strings file has a listing of all the names AIs can use and the game picks randomly. You can edit the list, but can't specifically name an AI (Galaxy Forge naming is just its own internal name I believe, the game doesn't use it). Pictures are more complicated, but there have been mods that did it.

The color, well, if you haven't guessed already it's also random. But you can go into options and toggle "use deep skyboxes" or something like that until you get the one you want, since it does a random one each time you re-enable.

AI in multiplayer?

he probably means a comp stomp... or is still thinking like other RTS where campaign AI isnt actually AI but is more scripted, while MP AI is more dynamic...

Lemmie clarify, I designed a map for a friend of mine that is themed along the lines of Fading Suns, if you are familiar with it. If not, check it out, it's a really cool space opera table top game. I'm on the cover of their terrible Live Action book which they put out. Anyhow, my friend wanted the different starting planets to have the names of the great houses that rule those worlds, ie Delphi-Hawkwood. He also wanted to have pictures that fit the theme, ie Decados-scarred, patch wearing guy. Of course, I have been told that you can not start the computer run characters with set names and and planets, or adjust what picture they have representing them. If you can enlighten me in a way to do this, I would appreciate it, if there is no way, then my friend and I will just have to deal with it, no biggy. If you really have to troll the forum just to let me know that I used a wording wrong, well you just have a nice day.
