I Can't Believe That Tasted Good

As I will probably be leaving out on the road again tomorrow I am basically using up the groceries I have on hand. I was looking through the fridge and cupboards trying to decide what to make for dinner. I had the ingredients for baked beans and some ground chuck. Hmmmmm.

Ok, I whipped up the makings for the baked beans, browned the chuck in some green and red bell peppers, onion, and red pepper. I then mixed it into the prepped beans and popped the whole mess into the oven. I really didn't expect it to be all that great but hell, it'd be better than starving.

Once it was finished I dished some out and gingerly gave it a taste. It actually wasn't bad. Not bad at all. Pretty good in fact.

Not a fan of the veggies part, but yummm on the ground chuck.  As long as it hit the spot though and you were happy with it, that's what really matters, right?

If there was cheese in there it would've been some strange pseudo taco.

It sounds like how my mom makes baked beans with the hamburger, onion and peppers.  She won't tell me exactly what she puts in it (isn't that mean and unmotherly?) but I know she also adds ketchup and mustard.  I guess I need to go to Ohio if I want some.

Is there really anything original? i think it sounds great.. It sounds great for the weather I'm in right now.. I love baked beans.. I add molasses, brown sugar, onions, peppers, etc. Adding a bit of ground chuck sounds interesting. My favorite bar b que place adds shredded beef to thiers.. that isn't that different from what you did.

I used to make a dish that came to be known as 'biker beans' that soon became a requirement any time my ex and I were invited to a pot-luck or pig-roast or any other large get-together.

I basically just took large cans of commercial baked beans (i'd drain the juice off) and simmered them with some chopped and sauteed onion, ground beef, bacon, and sliced keilbasa or little smokies, replacing the bean juice with bbq sauce I'd make with ketchup, vinegar, brown sugar, tabasco, worcestershire, liquid smoke and jack daniels.

Served with a sizeable hunk of cornbread and a cold beer, they were a meal in themselves.
